  1. Tempura x Sparkling Sake “John”: Tempura is one of the signature dishes in Japan which consists of seasonal ingredients such as seafoods and vegetables covered with flour and fried and served one at a time to guests. Sparkling sake, especially the brand named ‘John’, is a perfect match for tempura as it foams well enough to cut through the fried oil of tempura in order to enjoy the full flavours.
  2. Sushi x Cold sake (Junmai-shu, Ginjo-shu): Even if you have never been to Japan, you might have tried sushi before. Cold sake is a better match with sushi than hot sake due to the fact that it has the ability to refresh your palate. This goes especially well with white fish including sea bream and flounder. If you’re enjoying red fish such as tuna and salmon, I highly recommend you select daiginjo rather than junmai sake. Sake is a great pairing with sushi because both of them are made with rice.
  3. Kaiseki cuisine x Japanese wine: Kaiseki cuisine, a Japanese traditional dish, is served with various ingredients and cooking methods.
